1 TBS. Olive Oil
2 TBS. Lemon Juice
1 tsp. Salt
1 tsp. Chili Powder
1 tsp. ground cumin (optional)
1/2 cup Fresh Cilantro, chopped
4 Chicken Breasts
1/2 of a Green Bell Pepper, cut into sticks
1/2 of an Onion, cut into sticks
Tortillas
Cheese
Sour Cream
Tomatoes
1. Combine olive oil, lemon juice, salt, chili powder, cumin, and cilantro in a zippered plastic bag. Add chicken breasts and shake gently to coat with the mixture. Marinate in the refrigerator for 20 minutes.
2. In a large frying pan saute up the onions and green peppers.
3. Either grill up the chicken or just cook it in the frying pan. I use the same frying pan so that the onions and peppers get the marinade on them.
4. Slice the chicken into diagonal strips.
5. Place some chicken, onions and peppers on a tortilla and add some garnishes and enjoy.
