Prep: 5 minutes
Cook: 15 minutes
Yield: 4 servings
4 boneless, skinless chicken breasts (about 1 1/4 lbs)
salt and pepper
1 T Olive oil
1 1/2 cups pasta sauce
1 cup shredded mozzarella
1/4 cup grated Parmesan cheese
1. Season chicken with salt and pepper. Heat oil in skillet over medium heat. Add chicken and cook on both sides about 5 to 7 minutes, depending on thickness.
2. Reduce heat to medium-low. Spoon pasta sauce over chicken and simmer for additional 3 minutes. Sprinkle mozzarella, cover, and cook for an additional 2 minutes, or until cheese is melted and gooey. Sprinkle Parmesan cheese.
When I made it I put extra sauce in the pan and had spaghetti noodles with it. Also salad goes great with it or rolls.
