If you are adding a recipe, just type up the recipe with clear instructions. Also, please label it so it will be included in the sidebar. If it is a main dish, please label it as that and also label it with the meat that is included, and if it is a pasta. Basically label it with anything that it falls under. That way we can search more specifically if we want to. One last thing, we would love to hear about the recipe. Things like: if you like to serve it for or with certain things; where you got the recipe; if it is easy/hard/quick, please share!

Need some new recipes
Does anyone have any yummy soup recipes or dinners in the oven or crockpot dinners? I just feel with the cold winter coming that I need some new warm cooked dinners. Please post if you have some good ideas.

Pumpkin Bars
So I have this recipe for pumpkin bars and they were just too bold for me, so over the years I have made some modifications until they turned out just perfect. They are a very addicting dessert and if Scott could he would eat the whole pan.
2 cups flour
1 1/2 cups sugar
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 beaten eggs
1- 15 oz. can pumpkin mix (I think that Libby's is the best)
about 3/4 cup or a touch less oil
Mix together the flour, sugar, baking powder, cinnamon, baking soda, and salt. Add the eggs, pumpkin mix and oil and mix well. Pour into an ungreased baking pan and bake at 350 degrees for 25-30 minutes, (I find that 27 minutes in my oven is perfect) or until a fork comes out clean. When cooled frost with cream cheese frosting (see below). I usually just make half a recipe of the frosting because it makes a lot, or just store it in the freezer for next time. Enjoy!!

1/2 cup butter
2 tsp. vanilla
4 1/2 to 5 cups powdered sugar
In a mixing bowl beat together cream cheese, butter and vanilla. Gradually add 2 cups powdered sugar. Beat in 2 1/2 to 3 cups more powdered sugar until it reaches the desired thickness.

The Best BBQ Sauce
You guys are very lucky, because I have decided to share the family recipe with you. My step dad created this sauce and it is the best you have ever tasted. It is great with ribs and chicken.
2 lb Light brown sugar- break up all lumps
1/3 cup sugar
1/3 cup Parmesan cheese
2 18 oz Bottles of KC- Original or Hickory
1 T white vinegar
1 tsp Wright Natural Hickory flavor
Mix in order. Get rid of all lumps. Refrigerate one hour. Can be refrigerated several months. When basting meat, cannot contaminate container by dipping brush into it. (Recipe can also be halved)

Bean and Beef Enchiladas
1/2 lbs. ground beef (I used 1 pound so it was meatier)
1/2 cup chopped onion
1 tsp. chili powder
1- 15oz can pinto beans, drained and rinsed
1-4oz can green chili peppers
1-8oz. container sour cream
2 TBS. flour
1/2 tsp. garlic powder
8-6" corn tortillas
1-10oz. can enchilada sauce
1 cup shredded cheddar cheese
In a large skillet cook the ground beef, onion, and chili powder; drain. Stir in pinto beans and chili peppers set aside. In a small bowl combine sour cream, flour and garlic powder; mix and set aside. Place half of tortillas in the bottom of a lightly greased 2 quart baking dish. Top with half of meat mixture, half of sour cream mixture, and half of enchilada sauce. Repeat layers. Preheat oven to 350 degrees. Cover with foil. Bake for 35-40 minutes or until bubbly. Uncover, sprinkle with cheese and bake for 5 more minutes.

Pesto Feta Bread

1 loaf of the skinny bakery bread (baguette)
Pesto
Feta Cheese
Tomotoes
Slice bread and top with pesto. Cook in preheated oven at 350 degrees for about 8-10 minutes. Immediately top with feta cheese and diced tomatoes.

We need to do better
Girls,
I love the idea of having a blog full of recipes. It is such an easy way to exchange recipes, but some how we need to do better. Winter is coming, which means we will be staying home longer, and I am ready to use my oven. I feel like I cook the same thing over and over. Plus I love trying new recipes. Let's try and post at least 1 recipe each a month. Can we all commit to doing that? Please? Maybe we should invite other people to join to add more recipes. Any suggestions of people to invite and how to make time to type up recipes can be posted in comments!

Chicken Enchiladas
6 to 8 boneless/skinless chicken breasts, baked 1 hour (I just boiled chicken on stove for 20 min)
Sauce:
3 c Mozzarella cheese, grated
1 cup sour cream
2 cans cream of chicken soup
green onions to taste, chopped
Olives (if desired)
After chicken is cool, chop it into small pieces. Spoon into soft white flour taco shells. Cover with a little sauce; roll taco shells up in 9 X 13 inch dish and cover with remaining sauce and cheese. Bake at 350 for 20 minutes. This recipe makes plenty of sauce for 1 1/2 pans of enchiladas.
I liked this recipe because the mozzarella cheese gives it a different flavor.
