So I have this recipe for pumpkin bars and they were just too bold for me, so over the years I have made some modifications until they turned out just perfect. They are a very addicting dessert and if Scott could he would eat the whole pan.
2 cups flour
1 1/2 cups sugar
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 beaten eggs
1- 15 oz. can pumpkin mix (I think that Libby's is the best)
about 3/4 cup or a touch less oil
Mix together the flour, sugar, baking powder, cinnamon, baking soda, and salt. Add the eggs, pumpkin mix and oil and mix well. Pour into an ungreased baking pan and bake at 350 degrees for 25-30 minutes, (I find that 27 minutes in my oven is perfect) or until a fork comes out clean. When cooled frost with cream cheese frosting (see below). I usually just make half a recipe of the frosting because it makes a lot, or just store it in the freezer for next time. Enjoy!!
6 oz. package cream cheese
1/2 cup butter
2 tsp. vanilla
4 1/2 to 5 cups powdered sugar
In a mixing bowl beat together cream cheese, butter and vanilla. Gradually add 2 cups powdered sugar. Beat in 2 1/2 to 3 cups more powdered sugar until it reaches the desired thickness.
