Here is a very yummy, easy and quick soup recipe. We love it! The only real $$ thing is the rice. But I have also used plain rice and added spices to my liking. I also use 2 % milk instead of 1/2 and 1/2 because I never buy it. Alright, here is the recipe:
2 cups sliced carrots
1/2 cup chopped onion
1/2 cup chopped celery
2 Tbs. butter
3 Tbs. flour
2 cans chicken broth (I use about 4 cups water and 4 tsp chicken boulion, plus a little extra flour, because this way is a little more liquid)
2 2/3 c. cubed, cooked chicken (I only use 1 breast chicken, because of living on a budget :)
1 pkg (8.8 oz) Ready-to-Serve Long Grain and Wild Rice
1/4 cup half and half cream
1/8 tsp pepper
In large saucepan, saute carrots, onion and celery in butter until tender. Stir in flour until blended; gradually add broth. Bring to a boil, cook and stir for 2 min or until thickened. Stir in chicken, rice, cream and pepper; heat through.
Makes 4 servings.

I made this for dinner tonight and it was great. A few days ago I cooked a whole chicken (you can get them for like 70 cents/lb) in the crock post. I boke the leftover chicken into small pieces and saved them for the soup. I also saved the chicken broth and the soup had great flavor (and costs nothing). So there's an idea if anyones wants to make this.
